Born on the west coast of Scotland, Stephen's skills were developed in some of Glasgow and Edinburgh's most rigid and exacting European kitchens. After seven years there, his hard work earned him a scholarship in New York, where he joined Daniel Humm's world-renowned three-Michelin-starred Eleven Madison Park.
Whispers of Melbourne's dining scene drew him to Australia, and the freedom, diversity and energy of its culinary landscape had him hooked — the country has been home ever since. Over three years at Vue de Monde he rose from sous chef to Executive Chef, running one of Australia's most demanding kitchens. Two years as Head Chef at Estelle by Scott Pickett followed, through to the opening of Matilda 159 Domain, as his desire to explore his own creative identity grew.
In late 2018 Stephen joined LK Hospitality as Executive Chef, overseeing the food and beverage concepts for the luxury residential precinct Capitol Grand in South Yarra. Today, with a twenty-year career in hospitality, he serves as Culinary Director and Head Chef, leading a team of 120. He was a finalist for The Age Good Food Guide's Chef of the Year in both 2023 and 2024.
